Chicken Shish Kebab

Ingredients:
For Marinade
3 portions of boneless chicken breasts - cut into 2 by 2 inches cubes
3 cloves of garlic
1 tsp coriander seeds
1 tsp Hungarian sweet paprika
1 tsp cayenne pepper
1/4 cup honey
3 tbsp olive oil
2 tbsp lemon juice
1 tbsp italian herbs
Salt & pepper to taste

For grilling:
10-12 bamboo sticks or skewers or rosemary sticks
1 green capsicum/green pepper
1 yellow onion - quatered


1. Using pestle & mortar, pound garlic and coriander seed
2. Put the chicken in a mixing bowl and rub them with the garlic paste together with all the other marinade ingredients 
3. Marinade for at least one hour
4. Thread the chicken alternately with the capsicum and onion onto the skewers
5. Spray your grill with vegetable oil and put the skewers on it. Lightly brush your kebabs with the leftover marinade and some olive oil. Cook for 15 min until tender and chicken juices run clear.
